  • 2 cups graham cracker crumbs Alternatively, you can use digestive biscuits or vanilla wafer cookies.

For the Cheesecake Filling

  • 1 cup sugar
  • 2 packages cream cheese, softened Use vegan cream cheese for a plant-based version.
  • 2 large eggs Add one at a time, mixing well after each addition.
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce Homemade or store-bought works.
  • 1 teaspoon cinnamon

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking dish with non-stick spray or a light layer of butter.
  • In a medium bowl, combine graham cracker crumbs and melted butter until well combined.
  • Spread the crumb mixture evenly into the bottom of the greased baking dish, pressing down firmly.

Making the Filling

  • In a large mixing bowl, beat together softened cream cheese and sugar until smooth.
  • Add eggs, one at a time, mixing well after each addition, then stir in vanilla extract.
  • Gently fold in the diced apples.
  • Pour the cheesecake mixture over the prepared crust, spreading it evenly.
  • Drizzle caramel sauce on top and sprinkle cinnamon over it.

Baking and Cooling

  • Bake in the preheated oven for 30-35 minutes until the center is set.
  • Allow the bars to cool in the pan, then refrigerate for at least 2 hours before slicing.

Notes

Serve with vanilla ice cream or whipped cream, and enjoy during family meals or holidays. Store covered in the fridge for up to a week.
