For the sushi rice

  • 2 cups sushi rice Rinsed until water runs clear.
  • 2.5 cups water For cooking the sushi rice.
  • 1/2 cup rice vinegar For seasoning the cooked rice.
  • 2 tablespoons sugar For flavoring the rice.
  • 1 teaspoon salt To taste.

For the toppings

  • 1 piece avocado, sliced
  • 1 piece cucumber, julienned
  • 1 cup imitation crab meat, shredded Can be substituted with grilled chicken, shrimp, or tofu.
  • 4 sheets nori, cut into strips For added flavor and texture.

For serving

  • to taste soy sauce Use gluten-free if needed.

Preparation

  • Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
  • Slice the avocado and julienne the cucumber. Set these aside for assembly later.

Cooking the Rice

  • Combine the rinsed rice with the 2.5 cups of water in a rice cooker. Cook until the rice is tender and the water is absorbed, about 20 minutes.

Flavoring the Rice

  • In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until the sugar dissolves. Pour this mixture over the cooked rice and mix gently. Allow to cool to room temperature.

Assemble the Bowls

  • In serving bowls, layer the seasoned sushi rice, followed by slices of avocado and the julienned cucumber.
  • Sprinkle the shredded imitation crab over the top, then finish with nori strips. Drizzle with soy sauce if desired.
