Cajun Shrimp Pasta with Sausage

Ingrédients
  

Cajun Shrimp

  • 1/2 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tbsp butter for cooking shrimp

Pasta and Sauce

  • 8 oz fettuccine pasta
  • 1/2 lb smoked sausage sliced into rounds
  • 1 tbsp olive oil for cooking sausage
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese grated
  • fresh parsley chopped, for garnish

Instructions
 

  • Cook the fettuccine pasta according to package directions. Drain and set aside.
  • In a bowl, toss shrimp with olive oil and Cajun seasoning. Heat butter in a large skillet and cook shrimp 2–3 minutes per side until pink. Remove and set aside.
  • In the same skillet, add olive oil and sauté sliced sausage until browned. Add garlic and bell peppers and cook for 3–4 minutes until softened.
  • Pour in heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese until melted and smooth.
  • Return shrimp to the skillet, add cooked pasta, and toss everything together until evenly coated with the sauce.
  • Garnish with chopped parsley and serve warm.

Notes

Adjust the level of spice by adding more or less Cajun seasoning. For extra richness, add a tablespoon of cream cheese to the sauce. Best served immediately but can be refrigerated for up to 2 days.
