For the Cajun Cod Bites

  • 1 lb Cod fillets (Cut into bite-sized pieces)
  • 1 cup All-purpose flour Can substitute with gluten-free flour
  • 2 Large Eggs (Beaten) Can substitute with flaxseed mixture for vegan option
  • 1 cup Breadcrumbs (preferably panko) Can substitute with ground oats
  • 1 tablespoon Cajun seasoning Adjust for spice level preferences
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper

For the Creamy Garlic Mayo

  • 1/2 cup Mayonnaise Can substitute with Greek yogurt or vegan mayonnaise
  • 2 cloves Garlic (Minced)
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • for garnish Fresh parsley (Chopped)

Preparation

  • Gather all your ingredients. Cut the cod fillets into bite-sized pieces, and set aside the flour, eggs, and panko breadcrumbs in separate bowls.
  • Mix the Cajun seasoning, garlic powder, and paprika with salt and pepper.

Cooking the Cod Bites

  • Heat oil in a deep frying pan over medium-high heat. The oil should be hot enough that it sizzles when a small piece of bread is dropped in.
  • Coat each piece of cod in flour, then dip into the beaten eggs, and finally roll in the panko breadcrumbs.
  • Carefully place the coated cod pieces in the hot oil. Fry in batches for about 3-4 minutes on each side until golden brown and crispy.
  • Once cooked, use a slotted spoon to transfer the cod bites to a plate lined with paper towels to absorb excess oil.

Making the Creamy Garlic Mayo

  • In a small bowl, mix mayonnaise, minced garlic, lemon juice, and Dijon mustard until well combined.

Serving

  • Sprinkle the cod bites with chopped fresh parsley and serve immediately with the creamy garlic mayo.
