  • Gather all the ingredients. Dice the chicken breast into bite-sized pieces, chop the onion, slice the bell pepper, and measure out the pasta.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add the diced chicken along with Cajun seasoning. Cook for about 5-7 minutes until the chicken is browned and cooked through.
  • Once the chicken is cooked, toss in the chopped onion and sliced bell pepper. Sauté for an additional 3-5 minutes until the vegetables are tender and translucent.
  • Pour in the chicken broth, bringing the mixture to a simmer.
  • Reduce the heat and slowly add the heavy cream, stirring gently until everything is well combined.
  • Add the cooked penne pasta to the skillet, ensuring each piece is coated with the sauce.
  • Stir in the grated Parmesan cheese until it melts into the creamy sauce.
  • Finally, season with salt and cracked black pepper to taste.

Notes

For variations, consider adding shrimp instead of chicken, or incorporating spinach or kale for added nutrients. Use freshly grated Parmesan for the best flavor.
