For the whipped cream

  • 1 cup whipping cream Chill the bowl before whipping.

For the butterscotch layer

  • 3.4 ounces instant butterscotch pudding
  • ¾ cup butterscotch chips, roughly chopped and divided Reserve some for garnish.
  • 2 tablespoons heavy cream

For topping

  • 8 ounces Cool Whip Use for a light topping.
  • Chopped butterscotch chips and cinnamon graham cracker crumbs for garnish

Preparation

  • Gather all ingredients to streamline the process.
  • In a medium bowl, mix cinnamon graham cracker crumbs and sugar. Stir in melted butter until well combined.
  • Press the crumb mixture firmly into an 8x8 dish and freeze for 30 minutes.

Cream Cheese Layer

  • In a large bowl, blend softened cream cheese, powdered sugar, and vanilla until light and fluffy.
  • In another bowl, beat the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  • Spoon half of this mixture onto the prepared graham cracker crust and refrigerate.

Butterscotch Layer

  • To the remaining cream cheese mixture, add the butterscotch pudding mix, chopped butterscotch chips, and heavy cream. Fold gently until well combined.
  • Spread the butterscotch mixture over the cream cheese layer.

Final Touches

  • Top with Cool Whip and optional butterscotch chips and graham cracker crumbs.
  • Chill in the refrigerator for at least one hour or up to two.

Notes

For a gluten-free version, use gluten-free graham crackers. You can also use low-fat or dairy-free alternatives for cream cheese and Cool Whip.
