For the Chicken

  • 1.5 pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • 0.5 teaspoon curry powder
  • 1 tablespoon Greek yogurt can substitute with dairy-free yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter, divided

For the Sauce

  • 6 cloves garlic, minced
  • 1 medium onion, diced
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 0.5 teaspoon black pepper
  • 2 cups heavy cream
  • 0.5 teaspoon cayenne pepper, optional for heat
  • 1 teaspoon garam masala
  • 0.5 teaspoon curry powder
  • 0.25 cup freshly chopped parsley, optional for garnish

For Serving

  • Naan bread or steamed rice as a side

Preparation

  • Gather all your ingredients and cut the chicken thighs into bite-sized chunks.
  • In a mixing bowl, combine the chicken with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Allow it to marinate for at least 30 minutes.

Cooking

  • In a large skillet, heat 3 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken and cook for about 6-8 minutes until browned. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add 2 tablespoons of butter and sauté the minced garlic and diced onion until the onion is translucent and fragrant, about 3-4 minutes.
  • Pour in the tomato sauce along with sugar, salt, and black pepper. Stir to combine and let the sauce simmer for about 5 minutes.
  • Pour in the heavy cream, stirring to integrate it fully into the sauce base. Adjust the heat to medium-low, allowing it to thicken slightly.
  • Return the chicken to the skillet, ensuring it’s well-coated with the sauce. Stir gently and let it simmer for another 10 minutes.
  • Add garam masala, curry powder, and the remaining tablespoon of butter. Season with salt and adjust the heat level with cayenne pepper if desired. Allow it to simmer for an additional 5 minutes.
  • Remove from heat once the sauce has thickened to your liking. Garnish with freshly chopped parsley if desired.

Serving

  • Serve immediately with naan bread or steamed rice.

Notes

Marinating the chicken enhances the flavor. Adjust spices according to your preference. Store leftovers in an airtight container, refrigerate for up to 3-4 days or freeze for later use.
