Preparation

  • Gather all your ingredients and ensure your butter is softened.
  • In a large bowl, combine the creamy peanut butter, softened butter, and vanilla extract. Mix until smooth without lumps.
  • Gradually add the powdered sugar while mixing continuously until the mixture resembles a thick dough.
  • Form small portions of the mixture into balls, approximately 1 inch in size, and place them on a parchment-lined baking sheet.
  • Cover the baking sheet with plastic wrap and refrigerate for about 30 minutes.

Dipping and Setting

  • In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Heat in 30-second intervals, stirring until smooth.
  • Dip each chilled peanut butter ball into the melted chocolate, leaving the top uncovered.
  • Return the dipped balls to the baking sheet and allow them to set at room temperature or in the fridge until the chocolate hardens, about 30 minutes.

Serving

  • Once set, serve the Buckeyes on a platter or store them for later.

Notes

Store in an airtight container; lasts up to a week at room temperature, or two weeks in the fridge. Can be frozen for up to three months. Serve with cold milk or coffee for a delightful experience.
