Ingrédients
  

For the Filling

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Sandwich

  • 1 box graham crackers

For the Chocolate Coating

  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions
 

Preparation

  • Gather all your ingredients on a clean work surface.
  • In a mixing bowl, combine the creamy peanut butter, powdered sugar, and vanilla extract. Stir until smooth.
  • Spread a generous layer of the peanut butter mixture over half of the graham crackers.
  • Top each coated graham cracker with another to form sandwiches. Press gently.
  • Refrigerate the sandwiches for about 30 minutes.

Chocolate Coating

  • Melt the chocolate chips and coconut oil in the microwave, stirring until smooth.
  • Dip each sandwich in the melted chocolate and let the excess drip off.
  • Place the dipped sandwiches on parchment paper.
  • Return to the refrigerator to let the chocolate set for 30 minutes.
  • Serve chilled, and enjoy your Buckeye Graham Crackers!

Notes

Store in an airtight container in the refrigerator for up to a week. Can also be frozen for later use.
