Preparation

  • Start by measuring out all your ingredients. Gather your Rice Chex cereal, chocolate chips, peanut butter, butter, powdered sugar, and mini chocolate chips in one place.
  • In a microwave-safe bowl, combine 1 cup of semi-sweet chocolate chips, 1/2 cup of creamy peanut butter, and 1/4 cup of butter. Microwave this mixture in 30-second intervals, stirring in-between until it’s completely melted and smooth.
  • In a large bowl, measure out 4 cups of Rice Chex cereal. Once the chocolate mixture is ready, pour it over the cereal. Gently fold the chocolate over the cereal until everything is evenly coated.
  • Transfer the chocolate-coated cereal into a large zip-top bag or another bowl. Add 1 cup of powdered sugar to the bag, seal it, and shake gently until all pieces are coated.
  • Spread your sugary mixture across a baking sheet to cool. Allow it to set for about 15-20 minutes.
  • Once the mixture has cooled, sprinkle 1/2 cup of mini chocolate chips over the top and gently mix to distribute evenly.
  • Serve straight from the bowl or pack into snack bags for easy munching later.
  • If you have leftovers, place them in an airtight container to keep them fresh.

Notes

For variations, consider adding nuts for crunch or seasonal spices for flavor. Make sure to store in an airtight container for up to a week, or freeze for longer storage.
