  • 4 large sweet potatoes peeled and cubed
  • 1/2 cup unsalted butter for browning
  • 1/2 cup milk warm
  • salt to taste
  • black pepper to taste

Instructions
 

  • Peel and cut sweet potatoes into even chunks for even cooking.
  • Bring a large pot of salted water to a boil. Add sweet potatoes and cook for 15–20 minutes until tender.
  • In a skillet, melt butter over medium heat and cook until golden brown and nutty, about 5 minutes. Stir constantly to avoid burning.
  • Drain sweet potatoes well and return to the pot to release excess moisture.
  • Add brown butter and warm milk to the sweet potatoes. Mash until smooth and creamy.
  • Season with salt and pepper to taste. Mix until fully combined.
  • Serve warm, topped with a drizzle of brown butter and optional herbs or toasted nuts.

Notes

Use plant-based butter and almond milk for a vegan version. Add maple syrup or cinnamon for sweetness, or chipotle for a smoky twist. Store in the refrigerator up to 4 days or freeze for up to 3 months. Reheat with a splash of milk for creaminess.
