Flatbread Ingredients

  • 4 pieces Flatbreads (store-bought or homemade)
  • 1 pound breakfast sausage
  • 4 slices bacon chopped
  • 4 pieces eggs
  • 1 cup milk can use almond milk for dairy-free
  • 3 tablespoons flour can substitute with gluten-free flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons butter can substitute with margarine or olive oil

Preparation

  • Gather all your ingredients.
  • Chop your bacon and prepare the flatbreads.

Cooking

  • In a large skillet over medium heat, add chopped bacon and cook until crispy (6–8 minutes).
  • Remove bacon and drain on paper towels.
  • In rendered bacon fat, add sausage and cook until browned (6–8 minutes).
  • Sprinkle flour over sausage and cook for 1-2 minutes to form a paste.
  • Slowly pour in milk while whisking continuously until gravy thickens (3-4 minutes).
  • Preheat oven to 375°F (190°C).
  • On a baking sheet, place flatbreads and pour gravy over each.
  • Sprinkle cooked sausage and crispy bacon evenly over flatbreads.
  • Crack an egg onto each flatbread, seasoning with salt and pepper.
  • Bake in the oven for 10–15 minutes until eggs are firm to your liking.

Serving

  • Allow to cool slightly, slice if desired, and serve warm.

Notes

Avoid overcooking the eggs for best texture. You can customize by adding vegetables or other proteins.
