Preparation

  • Start by gathering all your ingredients and measure them out.

Cook the Sausage

  • Heat a skillet over medium heat and add the grounded pork sausage. Crumble the meat as it cooks for about 5-7 minutes until browned. Drain the excess fat and set aside.

Make the Gravy

  • In a saucepan, whisk together the whole milk, flour, salt, and black pepper over medium heat until thickened into a gravy (3-5 minutes).

Combine Ingredients

  • Stir the cooked sausage into the gravy until evenly combined. Remove from heat.

Preheat the Oven

  • Preheat your oven to 430°F (220°C).

Cook the Bacon

  • Cut the bacon into four pieces each. In a skillet, cook the bacon until crispy (5-6 minutes) and set aside while reserving the fat.

Sauté Spinach

  • Use the reserved bacon fat to sauté the spinach for 2 minutes until wilted.

Assemble Flatbreads

  • Spread sausage gravy over each flatbread and top with Cheddar Jack cheese, wilted spinach, sliced tomatoes, and bacon pieces.

Add Eggs

  • Crack two eggs into a small bowl and gently slide them onto each flatbread.
