  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Make sure the butter is softened but not melted.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Filling and Topping

  • 1/2 cup chocolate ganache Can be store-bought or homemade.
  • 1/2 cup vanilla pastry cream Can be store-bought or homemade.

Instructions
 

Preparation

  • Gather all the ingredients and measure them out.
  • In a mixing bowl, combine the flour, cocoa powder, baking soda, and salt. Whisk them together until well blended.
  • In another bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy (about 2-3 minutes).
  • Beat in the egg and vanilla extract until well incorporated.
  • Gradually add the dry ingredient mixture to the wet mixture and mix until fully incorporated.
  • Using a cookie scoop or spoon, drop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between cookies.

Baking

  • Preheat the oven to 350°F (175°C).
  • Bake the cookies for 10-12 minutes until set. They should feel soft but not doughy.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Filling and Topping

  • Prepare your vanilla pastry cream while the cookies are cooling (skip if store-bought).
  • Once cooled, fill each cookie with vanilla pastry cream and drizzle or spoon chocolate ganache on top.

Notes

Store cookies in an airtight container at room temperature for up to three days or freeze for up to three months. Allow to thaw at room temperature before serving.
