  • 1 kg octopus Fresh, cleaned
  • 1 onion, quartered
  • 2 bay leaves
  • to taste tsp Salt Adjust to preference
  • as needed liters Water For boiling

Preparation

  • Clean the octopus under cold running water.
  • Quarter the onion and gather the bay leaves and salt.

Cooking the Octopus

  • In a large pot, combine water, quartered onion, bay leaves, and salt.
  • Set on medium-high heat and bring to a rolling boil.
  • Carefully add the cleaned octopus to the pot.
  • Reduce heat to low, allowing to simmer for about 45 minutes.
  • Check for tenderness using a fork; if it pierces easily, it's done.
  • If not tender, continue simmering in increments of 5 to 10 minutes.
  • Once tender, remove the octopus from the pot and let cool before slicing.

Notes

For extra flavor, marinate boiled octopus with olive oil, garlic, and herbs after cooking. Try serving warm or cold.
