Preparation

  • Gather all ingredients and preheat the oven to 180°C (350°F).
  • In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan to form a crust.

Making the Filling

  • In another bowl, beat cream cheese until smooth. Gradually add sour cream and sugar, mixing until creamy.
  • Incorporate eggs one at a time into the mixture, mixing until fully combined.
  • Gently fold in blackberries and vanilla extract, taking care not to overmix.

Assembling the Cheesecake

  • Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula.

Baking

  • Bake in the preheated oven for 30-35 minutes, until edges are set and center is slightly jiggly.

Cooling and Serving

  • Remove from oven and cool to room temperature, then refrigerate for at least 4 hours.
  • Carefully unlatch the springform pan, slice, and serve chilled.

Notes
