  • 1 cup black eyed peas, rinsed and soaked overnight
  • 1 pound sausage (Italian or smoked)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth Can substitute with vegetable broth for vegetarian option
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste

Garnish

  • chopped green onions Optional for garnish

Instructions
 

Preparation

  • Rinse the black eyed peas thoroughly in cold water and soak them overnight.
  • Drain and set aside the soaked black eyed peas.

Cooking

  • In a large pot, cook the sausage over medium heat until browned, about 5-7 minutes.
  • Remove the sausage from the pot and set aside, leaving the drippings.
  • In the same pot, add the diced onion and minced garlic, sautéing until the onion becomes translucent.
  • Add the soaked black eyed peas, chicken broth, thyme, cumin, salt, and pepper into the pot.
  • Bring the mixture to a boil.
  • Reduce the heat and let it simmer for about an hour.
  • Stir in the cooked sausage and heat through for the last few minutes.
  • Taste and adjust seasoning if necessary before serving.
  • Serve warm, garnished with chopped green onions if desired.

Notes

Best served on colder months or festive occasions. Can be customized with additional spices or vegetables.
