  • 1 cup vegetable broth Can substitute with chicken broth or water.

Preparation

  • Gather all your ingredients. If using dried black-eyed peas, soak them overnight in water and rinse before beginning.

Cooking the Base

  • In a large pot, bring water to a boil and add the soaked black-eyed peas. Cook until tender (30-40 minutes) if using dried peas. If using canned, skip this step.

Cooking the Pasta

  • In a separate pot, bring salted water to a boil. Add your pasta and cook according to package instructions (8-10 minutes). Aim for al dente.

Sauté the Onions

  • In a skillet over medium heat, heat the olive oil. Add the chopped onion and sauté until translucent (3-5 minutes).

Adding Garlic and Peas

  • Add minced garlic to the skillet and sauté for an additional minute. Then, add cooked black-eyed peas and vegetable broth, stirring to combine. Simmer for about 5 minutes.

Combining Pasta and Peas

  • Drain the pasta, then add it to the skillet with the black-eyed pea mixture. Mix gently, ensuring the pasta is well coated.

Seasoning

  • Season with salt and pepper according to your taste.

Garnishing

  • Garnish with fresh herbs like basil or parsley. Serve warm.

Notes

For variations, consider adding vegetables or spices to customize your dish. Store leftovers in an airtight container in the refrigerator for up to 4 days.
