  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup Biscoff spread
  • 0.5 cups chopped Biscoff cookies

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • Melt the unsalted butter in a large mixing bowl and let cool slightly.
  • Add granulated and brown sugar to the melted butter; mix until creamy and smooth.
  • Incorporate the eggs one at a time, mixing well. Then add the vanilla extract.

Mixing

  • Whisk together the all-purpose flour, cocoa powder, baking powder, and salt in a separate bowl.
  • Gradually fold the dry ingredients into the wet mixture, stir gently until just combined.
  • Fold in the Biscoff spread and chopped Biscoff cookies until evenly incorporated.

Baking

  • Pour the brownie batter into the prepared pan and spread evenly.
  • Bake for 25-30 minutes until a toothpick inserted comes out clean with a few moist crumbs.

Cooling

  • Let brownies cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before cutting.
