  • 1 lb ground beef Can substitute with ground turkey or plant-based meat
  • 1 medium onion, diced
  • 2 cups shredded lettuce
  • 1 cup pickles, chopped
  • 2 cups shredded cheddar cheese
  • 1/2 cup Thousand Island dressing Can be substituted with ranch or homemade sauce
  • 1 package refrigerated crescent roll dough Gluten-free option available

Preparation

  • Gather all your ingredients. Chop the onion, shred the lettuce, and dice up the pickles.

Cooking the Base

  • In a skillet, heat a medium flame and add the ground beef. Cook until browned, about 6-8 minutes. Add the diced onion and cook until translucent, about 3-4 minutes. Drain any excess fat.

Assembling the Casserole

  • Preheat your oven to 375°F (190°C).
  • Spray a baking dish with cooking spray. Unroll the crescent roll dough and press it into the bottom of the dish.
  • Spread the beef and onion mixture evenly over the crescent roll dough.
  • Layer the shredded lettuce and chopped pickles on top.
  • Drizzle the Thousand Island dressing over the lettuce and pickles.
  • Sprinkle shredded cheddar cheese on top.
  • Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown.

Serving

  • Allow the casserole to cool for a few minutes, then slice and serve.

Notes

Store leftovers in the fridge for up to 3-4 days. Reheat in the oven for better texture.
