  • 3 1/4 cups all-purpose flour
  • 1/4 tsp baking powder
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1 to 2 tsp ground cinnamon Adjust to taste

Wet Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar, packed
  • 1 cup avocado oil or other neutral oil Can substitute with melted coconut oil or applesauce
  • 1 can (15 oz) pumpkin puree Libby’s recommended
  • 4 pieces eggs, at room temperature

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease two 9×5-inch loaf pans with a non-stick cooking spray or butter.
  • Gather all ingredients and measuring tools.

Mix Dry Ingredients

  • In a large bowl, add the all-purpose flour, baking powder, baking soda, and salt.
  • Add the ground nutmeg, ground cloves, and ground cinnamon, mixing thoroughly.

Mix Wet Ingredients

  • In another large bowl, combine the white sugar, brown sugar, and avocado oil.
  • Beat until well blended and smooth.
  • Add the pumpkin puree and eggs to the mixture, beating until everything is smooth and thick.

Combine Ingredients

  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Be careful not to overmix.

Bake

  • Divide the batter evenly between the prepared loaf pans.
  • Smooth the tops with a spatula.
  • Bake for 50-60 minutes until golden brown and a toothpick comes out clean.

Cooling

  • Allow the loaves to cool in their pans for about 10 minutes.
  • Transfer the loaves to a wire rack to cool completely.

Serving

  • Slice the bread as desired and serve, optionally with butter.

Notes

Can be frozen for up to 3 months. Thaw before serving. Use fresh spices for better flavor and consider adding nuts or chocolate for variation.
