Vinaigrette

  • 1/4 cup olive oil
  • 1 tablespoon honey Can be replaced with maple syrup or agave for a vegan option.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Rinse all fresh produce thoroughly under cold water and dry the spinach gently with paper towels or a salad spinner.
  • Slice the strawberries and set them aside.

Mixing

  • In a large salad bowl, combine the fresh spinach with the blueberries, raspberries, and sliced strawberries. Gently toss to mix.
  • In a separate smaller bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper.
  • Drizzle the vinaigrette over the salad mixture without overwhelming the greens.
  • Toss the salad gently to ensure the vinaigrette coats all the ingredients evenly.
  • Add crumbled feta and toasted pecans on top of the salad.
  • If desired, sprinkle a pinch of salt and pepper for additional seasoning.
  • Serve immediately to enjoy the fresh flavors and crisp texture.

Notes

Store any leftover salad in an airtight container in the refrigerator and keep the dressing separate for up to 2 days. Avoid combining too far in advance to maintain texture.
