For the Crostini

  • 1 pound beef tenderloin, trimmed
  • 8 ounces Gorgonzola cheese, crumbled
  • 1 baguette sliced into 1/4-inch thick pieces
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons balsamic glaze

Preparation

  • Gather all the ingredients. Trim the beef tenderloin and slice the baguette into 1/4-inch thick pieces.
  • Crumble the Gorgonzola cheese and set it aside.

Cooking

  • Season the beef tenderloin generously with salt and black pepper.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the beef for 3-4 minutes on each side until browned.
  • Transfer the beef to a baking dish and roast in a preheated oven at 400°F for 15-20 minutes, aiming for an internal temperature of 130°F for medium-rare.
  • While the beef roasts, arrange the baguette slices on a baking sheet.
  • Mix the minced garlic with the remaining olive oil and brush over the baguette slices.
  • Toast the baguette slices in the oven for about 5 minutes until golden and crispy.
  • Remove the beef and let it rest for 10 minutes before slicing it thinly against the grain.

Assembly

  • On a serving platter, place the toasted baguette slices.
  • Top each slice with a piece of beef and sprinkle crumbled Gorgonzola cheese over them.
  • Drizzle balsamic glaze over each crostini and garnish with arugula.
  • Serve immediately and enjoy!

Notes

To store, keep components separate and refrigerate. For reheating, warm beef in the oven and prepare fresh baguette slices. Try substituting with gluten-free resources when necessary.
