Beef Enchilada Tortellini

  • 1 lb ground beef
  • 1 package cheese tortellini 9–12 ounces
  • 1 can enchilada sauce 15 ounces
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Gather all your ingredients. Chop the onion and mince the garlic.
  • Heat olive oil in a skillet over medium heat. Add onion and garlic and sauté until fragrant and translucent.
  • Add the ground beef and cook until browned, breaking it apart as it cooks.
  • Stir in the enchilada sauce and simmer for 5 minutes to blend flavors.
  • Meanwhile, cook tortellini in salted boiling water according to package directions. Drain.
  • Combine the cooked tortellini with the beef mixture and stir gently to coat.
  • Transfer mixture to a greased baking dish. Top generously with shredded cheese.
  • Bake at 350°F (175°C) for about 15 minutes, or until cheese is melted and bubbly.
  • Let cool slightly before serving. Garnish with fresh cilantro or sour cream if desired.

Notes

You can swap ground beef with turkey, chicken, or plant-based meat. Add diced bell peppers, corn, or jalapeños for extra flavor and texture. For a gluten-free option, use gluten-free tortellini.
