  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 cup refried beans
  • 1 tsp taco seasoning
  • as needed tbsp vegetable oil for frying

Preparation

  • Start by gathering all your ingredients.
  • In a skillet over medium heat, add the ground beef. Cook it until browned, about 5-7 minutes.
  • Once the beef is browned, stir in the taco seasoning and cook for another 2-3 minutes.
  • Warm the tortillas in the microwave for about 10 seconds to make them pliable.
  • Spread a couple of tablespoons of refried beans onto each tortilla, then spoon the seasoned beef on top followed by a sprinkle of shredded cheese.
  • Roll the tortillas tightly, tucking in the sides.
  • If needed, use toothpicks to hold the chimichangas together.
  • In a frying pan, heat vegetable oil over medium heat until hot.
  • Gently place the chimichangas in the hot oil, seam side down, and fry for about 3-4 minutes on each side until golden brown.
  • Remove chimichangas and place them on paper towels to drain any excess oil.
  • Serve hot with salsa or toppings such as sour cream or guacamole.

Notes

To keep chimichangas fresh, store leftovers in an airtight container in the fridge for 3-4 days. For longer storage, wrap individually and freeze for 2-3 months. Reheat in the oven for best results.
