Ingrédients
  

For the Salmon Bites

  • 1 lb fresh skinless salmon, cut into bite-sized cubes Wild-caught salmon is preferred.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs Gluten-free options available.
  • 1 tbsp olive oil or spray for crisping

For the Bang Bang Sauce

  • ½ cup mayonnaise Can substitute with plant-based mayonnaise for vegan option.
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha, adjust to taste Add more for extra heat.
  • 1 tsp honey (optional)
  • Juice of ½ lime

For Serving

  • 2 cups cooked jasmine rice or cauliflower rice
  • 1 cup shredded purple cabbage
  • 1 whole avocado, sliced
  • ½ cup shredded carrots
  • 2 whole green onions, sliced
  • Fresh cilantro, for garnish
  • Sesame seeds, for garnish

Preparation

  • Gather and prep all your ingredients: cut the salmon into cubes, shred the cabbage, slice the avocado, and chop the green onions.

Cooking the Salmon

  • Preheat your oven to 400°F or your air fryer to 390°F. Mix garlic powder, smoked paprika, salt, and black pepper in a bowl.
  • Toss the salmon cubes in the spice mixture until evenly coated.
  • Press each cube into the panko breadcrumbs to ensure an even coating.
  • Arrange the salmon bites on a parchment-lined baking tray, ensuring some space between them for even cooking.

Cooking

  • Bake the salmon for 12 to 14 minutes, or air fry at 390°F for 8 to 10 minutes, flipping halfway through.

Preparing Bang Bang Sauce

  • Whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until smooth.

Assembling the Dish

  • Layer your choice of cooked jasmine rice or cauliflower rice in bowls.
  • Add shredded cabbage, avocado, and carrots on top.
  • Place several salmon bites on top and drizzle with Bang Bang sauce.
  • Garnish with sliced green onions, cilantro, and sesame seeds.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to regain crispiness. Customize spices and sauces to fit dietary preferences.
