Ingrédients

Main Ingredients

  • 1 lb chicken fillet, diced
  • 1/4 cup peanut butter Can substitute with sunflower seed butter for nut-free option.
  • 1/4 cup soy sauce Use low-sodium soy sauce to reduce sodium content.
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 teaspoon red pepper flakes Adjust to taste for controlled spice level.
  • Green onions, for garnish Slice for garnish before serving.

Instructions

Preparation

  • Start by gathering all your ingredients. Dice the chicken fillet into bite-sized pieces for even cooking. Mince the garlic and ginger and measure out the other ingredients.

Cooking the Chicken

  • Heat a pan over medium heat, adding a bit of oil if necessary. Once hot, add the diced chicken pieces. Cook until browned and cooked through, about 5-7 minutes.

Making the Sauce

  • In a bowl, combine peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, minced ginger, and red pepper flakes. Stir until smooth.

Combining Ingredients

  • Pour the prepared sauce over the cooked chicken and stir well. Let it simmer for about 2-3 minutes.

Serving

  • Transfer the chicken to a serving dish and garnish with sliced green onions. Serve hot over rice or noodles.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to three months. Reheat in a skillet with some water to retain moisture.
