  • 1 lb flank steak Trimmed of excess fat
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella, diced Substitutions include vegan cheese for lactose intolerance
  • 1/2 cup balsamic glaze Ensure gluten-free if necessary
  • to taste salt and pepper

Instructions
 

Preparation

  • Gather all your ingredients and ensure the flank steak is trimmed.
  • Halve the cherry tomatoes and dice the mozzarella.

Marination

  • Combine olive oil, salt, and pepper in a bowl, then coat the flank steak evenly with this mixture.
  • Let it marinate for at least 30 minutes; longer for more flavor.

Grilling

  • Preheat the grill to medium-high heat.
  • Grill the marinated flank steak for approximately 4-5 minutes on each side for medium-rare.

Resting and Serving

  • Remove the steak from the grill and let it rest for 5 minutes.
  • Slice the steak thinly against the grain.
  • In a bowl, combine the halved cherry tomatoes and diced mozzarella, drizzle with balsamic glaze, and toss gently.
  • Top the sliced steak with the Caprese mixture and garnish with fresh basil leaves.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Allow to cool before storing.
