Preparation

  • Gather and prepare all your ingredients. Thaw and drain the spinach to prevent excess moisture.
  • Slice the onion and mince the garlic.

Cooking Base

  • Heat olive oil in a skillet over medium heat until shimmering.
  • Add sliced onions and sauté for 3 to 4 minutes until translucent.
  • Add minced garlic and cook for an additional 30 seconds until fragrant.

Spinach Mixture

  • Incorporate thawed spinach to the skillet. Stir gently for 2 to 3 minutes until heated.
  • Season with salt and pepper, then stir in sour cream until creamy.

Oven Preparation

  • Preheat your oven to 350°F (175°C).
  • Season salmon fillets generously with salt and pepper.

Searing Salmon

  • In a separate pan, sear each side of the salmon for about 2 minutes.

Assembly

  • Grease a baking dish and place the seared salmon skin-side down.
  • Spread the creamy spinach mixture evenly over the salmon.
  • Top with sprinkled mozzarella cheese.

Baking

  • Bake the dish for 15 to 20 minutes until the salmon is opaque and the cheese is golden.
