Preparation

  • Preheat your oven to 400°F (200°C). Gather all your ingredients.
  • In a large bowl, combine ground chicken, ricotta cheese, grated parmesan cheese, fresh herbs, egg, breadcrumbs, garlic powder, salt, and pepper. Mix until well combined.
  • Take a scoop of the mixture and roll it into balls about 1-1.5 inches in diameter. Place them on a lined baking sheet.

Cooking

  • Bake the meatballs in the preheated oven for 20-25 minutes until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
  • Prepare a sauce (e.g., creamy garlic parmesan or marinara), if desired.
  • Once cooked, allow the meatballs to rest for a few minutes before serving.

Serving

  • Garnish with parmesan and fresh herbs before serving.
  • Consider serving with pasta, salad, or on a sub.
