  • 2 ripe avocados peeled and diced
  • 1 cup tomatoes diced
  • 1/2 cup red onion finely chopped
  • 1 jalapeño seeded and minced
  • 1/4 cup cilantro chopped
  • 2 tbsp lime juice freshly squeezed
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper

Instructions
 

  • In a large mixing bowl, combine the diced avocados, tomatoes, red onion, jalapeño, and cilantro.
  • Add lime juice, salt, and black pepper. Gently toss to combine without mashing the avocado too much.
  • Taste and adjust seasoning as desired. Serve immediately with tortilla chips or store covered in the fridge for up to 1 day.

Notes

For extra flavor, add a clove of minced garlic or a drizzle of olive oil. Best enjoyed fresh!
