  • 4 medium medium-sized apples (such as Honeycrisp or Fuji), cored and sliced
  • 4 large large carrots, peeled and cut into 1-inch pieces
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1/4 cup walnuts, chopped (optional)
  • Fresh parsley, for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Wash and prepare the fresh produce by coring and slicing the apples and peeling and cutting the carrots into 1-inch sections.

Cooking the Base

  • In a large mixing bowl, combine the maple syrup, Dijon mustard, olive oil, ground cinnamon, salt, black pepper, and chopped rosemary. Whisk until smooth.

Tossing the Vegetables

  • Add the sliced apples and carrot pieces to the bowl. Toss gently to coat them well with the maple Dijon mixture.

Preparing to Roast

  • Spread the coated mixture evenly on a parchment-lined baking sheet. If using walnuts, sprinkle them on top.

Roasting

  • Place the baking sheet in the oven and roast for about 25-30 minutes, stirring halfway through.

Checking for Doneness

  • Check that the apples are tender and caramelized, and the carrots are cooked but still have a slight bite.

Serving

  • Remove from oven, let cool for a few minutes, then transfer to a serving dish. Garnish with fresh parsley if desired.

Notes

Consider adding a splash of balsamic vinegar for extra depth or substitute rosemary with thyme. This dish is a versatile side for various meals and can easily accommodate dietary preferences.
