  • 4 large potatoes peeled and diced
  • 1 onion diced
  • 2 carrots diced
  • 3 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • salt and pepper to taste
  • fresh chives for garnish

Instructions
 

  • Prepare all the vegetables by peeling and dicing the potatoes, carrots, and onion.
  • In a large pot, melt the butter over medium heat. Add diced onion and carrots, and cook for 5–7 minutes until softened.
  • Add the diced potatoes and stir well to combine the flavors.
  • Pour in the broth and bring the soup to a boil. Reduce the heat and simmer for about 20 minutes until the potatoes are tender.
  • Using an immersion blender, blend the soup until smooth, or leave it slightly chunky if preferred.
  • Stir in the heavy cream and mix well. Adjust consistency by adding more broth if necessary.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh chives. Enjoy with crusty bread or sausages for an authentic German experience.

Notes

For a lighter version, replace heavy cream with milk or coconut milk. Add garlic or herbs like thyme for extra depth of flavor. The soup keeps well for up to 4 days in the fridge or can be frozen for up to 3 months.
