Ingrédients
  

Gingerbread Pudding

  • 2 cups apples peeled, cored, and diced
  • 3/4 cup dates pitted and chopped
  • 1/3 cup molasses
  • 1/4 cup brown sugar
  • 2 eggs room temperature
  • 1 cup milk
  • 3 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  • Spread diced apples and chopped dates evenly in the prepared baking dish.
  • In a mixing bowl, whisk together molasses, brown sugar, eggs, milk, melted butter, vanilla, ginger, cinnamon, cloves, and salt.
  • Pour the gingerbread mixture evenly over the apples and dates.
  • Bake for 35–40 minutes, or until the pudding is set and slightly puffed.
  • Cool slightly and serve warm, plain or with whipped cream or vanilla ice cream.

Notes

This pudding develops deeper flavor as it rests. Leftovers reheat well and make a cozy next-day dessert.
