  • 3 to 4 pounds pork loin roast
  • 2 cups apple cider Unsweetened apple juice can be used as a substitute.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard Ensure it's gluten-free if necessary.
  • 2 teaspoons dried thyme
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup apples, cored and sliced Preferably a mix of sweet and tart.
  • 1 cup chicken broth
  • Fresh thyme sprigs for garnish Optional.

Preparation

  • Begin by gathering all your ingredients including chopping the onion, mincing the garlic, and slicing the apples.

Mixing the Marinade

  • In a large mixing bowl, whisk together the apple cider, chopped onion, minced garlic, olive oil, Dijon mustard, dried thyme, ground cinnamon, salt, and black pepper until well-blended.

Coating the Pork

  • Place the pork loin roast in a large roasting pan and pour the apple cider mixture over it, ensuring every inch is coated.

Adding Apples and Broth

  • Arrange the sliced apples around the pork roast in the pan and pour in the chicken broth at the bottom.

Roasting

  • Cover the roasting pan tightly with aluminum foil and preheat your oven to 350°F (175°C). Roast the pork for about 2 hours or until the internal temperature reaches 145°F (63°C).
  • About 30 minutes before the roast finishes, remove the foil to allow the pork to brown.

Rest and Serve

  • Once cooked, remove the pork from the oven and let it rest for at least 15 minutes before slicing. Serve with the pan juices and apple slices.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish is perfect for family dinners and also can be made in a slow cooker for convenience.
