  • 3 tablespoons Honey (Can substitute with maple syrup)
  • 2 tablespoons Butter (Can substitute with coconut oil for vegan version)
  • 1 teaspoon Salt (Adjust to taste)
  • 1/2 teaspoon Pepper (Freshly ground preferred)
  • 2 tablespoons Parsley (Optional, for garnish)
  • 1/4 cup Brown Sugar (Can replace with sugar alternative)
  • 1 teaspoon Garlic Powder (Fresh minced garlic can be substituted)

Instructions
 

Preparation

  • Begin by washing and peeling your fresh carrots. Cut them into uniform pieces, about 1 to 2 inches long.
  • Preheat your oven to 375°F (190°C).

Mixing Ingredients

  • In a small bowl, combine the honey and melted butter (or coconut oil if using). Stir until well blended.
  • In a large mixing bowl, combine the cut carrots with salt, pepper, and garlic powder. Toss them well.
  • Pour the honey-butter mixture over the seasoned carrots and mix well.

Baking

  • Grease a baking dish lightly with oil or butter, and spread the glazed carrots evenly in the dish.
  • Place the baking dish in the preheated oven and bake for 25-30 minutes, stirring halfway through.
  • Check for doneness; the carrots should be tender and caramelized.

Serving

  • Once baked, remove from the oven and let cool slightly.
  • Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can freeze for longer storage. Reheat in the microwave or oven.
