Base Ingredients

  • 2 tablespoons olive oil Adds richness.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated Or 1 teaspoon ground ginger.
  • 2 cups carrots, sliced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 4 cups vegetable broth
  • 1 cup creamy peanut butter
  • 1 teaspoon cayenne pepper Adjust to taste.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chopped collard greens or kale

Preparation

  • Gather and prep all ingredients: chop the onion, mince the garlic, grate the ginger, slice the carrots, and peel and cube the sweet potatoes.

Cooking the Base

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes or until softened. Add the minced garlic and ginger, cooking for another minute until fragrant.

Adding Vegetables

  • Stir in the sliced carrots and cubed sweet potatoes. Cook for 2 minutes before adding the diced tomatoes and tomato paste, stirring everything together thoroughly.

Cooking the Broth

  • Pour the vegetable broth into the pot and bring it to a boil. Once boiling, reduce the heat to let it simmer for 20 minutes or until the vegetables are tender.

Finishing the Soup

  • Stir in the creamy peanut butter and cayenne pepper, mixing until the soup is smooth and creamy.

Adding Greens

  • Add the chopped collard greens or kale, and simmer for an additional 5 to 10 minutes until the greens are wilted and tender.

Adjust Seasoning

  • Taste the soup and season with salt and black pepper as needed.

Serve

  • Serve hot, optionally pairing with rice, naan, or flatbread for a complete meal.

Notes

For enhanced flavor, consider toasting peanuts before adding. You can mix in soy sauce or lime juice to brighten the dish.
