Main Ingredients

  • 2 pounds beef chuck, cut into bite-sized pieces
  • 4 tablespoons garlic butter (store bought or homemade)
  • 1 pound baby potatoes, halved
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried rosemary
  • 1 cup beef broth

Instructions

Preparation

  • Start by cutting your beef chuck into bite-sized pieces.
  • Wash and halve the baby potatoes.

Seasoning and Browning

  • Season the beef generously with salt and pepper.
  • In a skillet over medium heat, melt the garlic butter. Add the seasoned beef bites and brown them on all sides for about 5 minutes.

Slow Cooking

  • Transfer the browned beef bites to the slow cooker, including any buttery juices from the skillet.
  • Add the halved baby potatoes to the slow cooker.
  • Sprinkle dried rosemary over the beef and potatoes.
  • Pour in the beef broth.
  • Cover and cook on low for 6-8 hours.

Serving

  • Check for tenderness; beef bites should be fork-tender, and potatoes easily pierced.
  • Serve warm, drizzling with garlic butter sauce from the slow cooker.

Notes

Leftovers taste even better the next day. Reheat gently on the stove or in the microwave.
